Watercress Bean Salad

Prep Time 15 minutes

Ingredients
  

  • 2 cups watercress
  • 2 carrots ( shredded )
  • 2 cups cucumbers ( chopped )
  • 2 tbsp chia seeds
  • 2 green onions ( chopped )
  • 2 tsp olive oil
  • 1/2 lemon
  • 1 1/2 cup previously cooked beans or 1 can of beans
  • 1/2 cup chopped radishes
  • 1/3 cup pumpkin seeds and / or 1/2 cup of sunflower seeds

Instructions
 

  • Mix all ingredients well, add lemon and oil.
    Enjoy with Red Lentil Veggie Patty
