
Watercress Bean Salad
Ingredients
- 2 cups watercress
- 2 carrots ( shredded )
- 2 cups cucumbers ( chopped )
- 2 tbsp chia seeds
- 2 green onions ( chopped )
- 2 tsp olive oil
- 1/2 lemon
- 1 1/2 cup previously cooked beans or 1 can of beans
- 1/2 cup chopped radishes
- 1/3 cup pumpkin seeds and / or 1/2 cup of sunflower seeds
Instructions
- Mix all ingredients well, add lemon and oil. Enjoy with Red Lentil Veggie Patty

Bulgar Avocado While Bean Salad
Ingredients
- head romaine lettuce
- 2 cups Cooked Bulgar Wheat ( 1 cup dry Bulgar boiled in 3 cups water )
- 1 can BPA Free While Beans
- 1 Avocado ( sliced )
- 1 tbsp olive oil
- 1 tbsp vinegar
- 1 pinch salt
- 2 tbsp cranberries ( dried )
Instructions
- Add all ingredients to ball
- Cut up the lettuce per your preference
- Add vinegar and oil before consumption
